Redesigning a bacterial enzyme aids production of rare sugar from table sugar [Registered]

Researchers from the Ghent University, Belgium have modified sucrose phosphorylase from Bifidobacterium adolescentis (BaSP) that can be used as a transglucosylase in the production of rare sugar nigerose from sucrose and glucose. This could provide a cheap and convenient route to make enough nigerose to explore potential applications in the food and pharmaceutical industries.…
