State of hygiene in Polish beet sugar factories after implementation of food safety management systems [Full subscriber]

Abstract This paper describes the impact of implemented food safety management systems on the improvement of the microbiological quality of produced sugar in beet sugar factories. Places of monitoring of potential sites that may contribute to the growth of microbiological contamination of white sugar were indicated. These include not only the hazards arising during the manufacturing process but also during packaging and storage. An important aspect of the microbiological safety of white sugar is the elimination of the finished product secondary infection sites, which may include air used for drying and cooling of sugar.
