Abstract Consumers in the USA and around the world are becoming increasingly more familiar with health benefitting antioxidants, and are looking for beverages/foods that are good sources of antioxidants. Sugarcane is a rich source of phenolic compounds and antioxidants.  Plant phenolic compounds including flavonoids have been recognized as important nutrients in foods and beverages that contribute to the consumption of antioxidants, and allow for health and wellness claims for a particular foodstuff.  Phenolic compounds are frequently found in fruits, vegetables, and cereals and are available in concentrated form in botanical extracts, e.g., cranberry, rosemary, and tea extracts.
