Abstract Nitrites that are primarily formed by nitrates reduction during sucrose extraction from sugar beet cossettes. A part of these compounds pass through the whole production process and accumulate in molasses. Molasses is a valuable material for the production of livestock feed, that is only temporarily excluded from the list of products subjected to the limit concerning the content of nitrites.
