Development of microbiological indicators for evaluation of the state of hygiene in beet sugar factories [Full subscriber]

The article deals with long-term research conducted by The Polish Institute of Sugar Industry connected with developing guidelines for the production of beet sugar that attests to exemplary hygienic conditions throughout the production process. The potential sources of secondary contamination of sugar were identified. The hygienic condition of machinery and equipment, packaging, microbiological quality of air, the hands of employees were examined. This made it possible to formulate microbiological recommendations for each of the processes that the plant needs to control in terms of microbial infections. These processes have a strong impact on the final microbiological contamination of white sugar.…
