Abstract Most product streams within the sugar process have physical properties that are well defined. However, upon crystallisation, the behaviour of the two-phase product becomes more complex. The physical properties of massecuite affect the design of all equipment and piping in the back-end of a sugar factory, however, the performance of equipment is only as reliable as the data on which the design is based.
